Bun Rieu Recipe – Vietnamese Crab Noodle Soup

1. Bun Rieu Recipe


  • 1 pound fresh crab (or canned crab meat)
  • 1 pound pork bones
  • 2 pounds of pork shoulder, cut into bite-sized pieces
  • 1 package of firm tofu, cut into small cubes
  • 1 small can of tomato paste
  • 1 onion, peeled and sliced in half
  • 3 tablespoons fish sauce
  • 1 tablespoon salt
  • 2 tablespoons sugar
  • 1 teaspoon shrimp paste
  • 4 cloves garlic, minced
  • 2-3 red chilies, sliced
  • 1 tablespoon vegetable oil
  • 1 package of rice noodles (vermicelli)
  • 2 cups of bean sprouts
  • 1 cup of fresh mint leaves
  • 1 cup of fresh cilantro leaves
  • 1 lime, cut into wedges
  • 2 green onions, thinly sliced


In a large pot, add the pork bones and enough water to cover them. Bring to a boil and let simmer for 15-20 minutes. Remove from heat and discard the water. Rinse the pork bones under cold water and set aside.

In a blender, puree the crab meat and 1 cup of water until smooth. Strain the mixture through a fine-mesh sieve and set aside.

Add the pork bones, pork shoulder, and shrimp paste to the pot. Pour in the crab broth and enough water to cover the ingredients. Bring to a boil, then reduce heat and let simmer for 30-45 minutes.

Add the fish sauce, salt, and sugar to the pot. Adjust the seasoning to taste. While the soup is simmering, cook the rice noodles according to the package instructions. Drain and rinse under cold water.

To serve, divide the cooked noodles into serving bowls. Ladle the hot soup over the noodles. Add the cubed tofu, bean sprouts, green onions, mint leaves, cilantro leaves, and a squeeze of lime to each bowl.
