Ingredients

  • 3 cups cooked jasmine rice (preferably day-old and chilled)
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced

  • 1 cup cooked protein of your choice (shrimp, chicken, or tofu), diced

Instructions

Heat a large skillet or wok over medium-high heat. Add the vegetable oil and let it heat for a minute.

Add the minced garlic and chopped onion to the hot oil. Stir-fry for about 1-2 minutes until the onion becomes translucent and aromatic.

Push the garlic and onions to one side of the pan. Pour the lightly beaten eggs into the other side. Allow them to cook for a moment, then scramble them with a spatula until they are fully cooked and set.

Add the diced protein (shrimp, chicken, or tofu) to the pan along with the mixed vegetables. Stir-fry for another 2-3 minutes until the protein is heated through and the vegetables are tender.

Add the chilled, cooked rice to the pan. Use a spatula to break up any clumps and evenly distribute the rice with the other ingredients. Stir-fry for a few minutes to heat the rice thoroughly.

Drizzle the fish sauce and soy sauce over the rice. Sprinkle in the sugar and a pinch of black pepper. Stir everything together to ensure the rice is well coated and the flavors are evenly distributed.
