Vietnamese Fried Rice Recipe

1. Vietnamese Fried Rice Recipe

Ingredient

  • White rice: about 4 cups.
  • Chicken eggs: 2 eggs
  • Char siu meat: 100gr
  • Sausage: 1 plant
  • Dried shrimp: 20g
  • Peas: 100gr
  • Carrot: 1 piece
  • Garlic, green onions, coriander
  • Cooking oil, fish sauce
  • Spices: seasoning, sugar, salt, oyster sauce

Instructions

Step 1: Prepare Ingredients

  • Char siu meat, diced sausage
  • Boil the peas and carrots and cut the carrots into dice.
  • Dried shrimp soaked in water to expand.
  • Sausage fry until cooked. Note: do not use cooking oil for frying because the sausage has fat.
  • Put the rice, carrots, peas, and char siu in a bowl, and then add 1 tablespoon oyster sauce, 1/3 teaspoon salt, one teaspoon sugar, and two teaspoons of seasoning. Mix it all.
  • Eggs, break into a bowl, and beat until smooth.

Step 2: Fry the rice

– Put the pan up and add a little oil, add minced garlic and fry until fragrant; add the dried shrimp and stir well; add one teaspoon of sugar to make the shrimp shiny and sweet.

– Add the sausages to the pan (remember to remove the outer fat), stir well, and then add everything to mix with the prepared rice mixture above.

– Return to the pan and add two tablespoons of cooking oil, pour in the beaten eggs, and fry. When the eggs are slightly cooked, immediately add the rice mixture, mix until all ingredients are cooked, then turn off the heat.

Step 3: Put the fried rice in a bowl and sprinkle with chopped scallions and cilantro to decorate the top. Serve fried rice with dipping sauce and steamed broccoli

Tips

  • The rice should be cooked slightly dry, avoiding the rice being crushed when frying.
  • Don’t use cooking oil for frying because the sausage has fat
