1. Vietnamese Fried Rice Recipe

  • 3 cups cooked jasmine rice (preferably day-old and chilled)
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 2 eggs, lightly beaten
  • 1 cup cooked protein of your choice (shrimp, chicken, or tofu), diced
  • 1 cup mixed vegetables (carrots, peas, and corn)
  • 2 tablespoons fish sauce
  • 1 tablespoon soy sauce
  • 1/2 teaspoon sugar
  • A pinch of black pepper
  • Chopped fresh cilantro and green onions for garnish

Heat a large skillet or wok over medium-high heat. Add the vegetable oil and let it heat for a minute.

Add the minced garlic and chopped onion to the hot oil. Stir-fry for about 1-2 minutes until the onion becomes translucent and aromatic.

Push the garlic and onions to one side of the pan. Pour the lightly beaten eggs into the other side. Allow them to cook for a moment, then scramble them with a spatula until they are fully cooked and set.

Add the diced protein (shrimp, chicken, or tofu) to the pan along with the mixed vegetables. Stir-fry for another 2-3 minutes until the protein is heated through and the vegetables are tender.

Add the chilled, cooked rice to the pan. Use a spatula to break up any clumps and evenly distribute the rice with the other ingredients. Stir-fry for a few minutes to heat the rice thoroughly.

Drizzle the fish sauce and soy sauce over the rice. Sprinkle in the sugar and a pinch of black pepper. Stir everything together to ensure the rice is well coated and the flavors are evenly distributed.

Taste the fried rice and adjust the seasonings according to your preference. You can add more fish sauce, soy sauce, or sugar if needed.

Remove the pan from the heat. Garnish the fried rice with freshly chopped cilantro and green onions.

Vietnamese fried rice is typically served hot as a main dish. You can serve it as is or with some additional fresh herbs, lime wedges, or hot sauce on the side for extra flavor.

When finished, fried rice has an eye-catching color with the yellow of the rice, the green of the beans, the red of the shrimp, and the attractive aroma of other ingredients. Hopefully, you will successfully make this dish with the Vietnamese fried rice recipe I guide in this article.
