1. Vietnamese Sticky Rice Recipe


For the Sticky Rice

  • 2 cups glutinous rice (sticky rice)
  • 1 cup coconut milk
  • 1/2 teaspoon salt
  • 1 teaspoon sugar
  • Banana leaves (optional, for wrapping)

For the Chicken Topping

  • 1 pound boneless chicken thighs, diced
  • 2 cloves garlic, minced
  • 1 shallot, finely chopped
  • 2 tablespoons vegetable oil
  • 2 tablespoons fish sauce
  • 1 tablespoon soy sauce
  • 1/2 teaspoon sugar
  • A pinch of black pepper
  • Chopped green onions and fried shallots for garnish


Step 1: Cooking the Sticky Rice

Rinse the glutinous rice in cold water until the water runs clear. Soak the rice in water for at least 2 hours or preferably overnight. Drain well.

If you have banana leaves, cut them into squares and briefly heat them over an open flame or in a hot oven to make them pliable. Line a steamer basket or bamboo steamer with the banana leaves.

Place the soaked and drained glutinous rice onto the banana leaves in the steamer. Steam the rice over high heat for about 30-40 minutes, or until the rice is tender and fully cooked. Check the rice occasionally and add more water to the steamer if necessary.

While the glutinous rice is steaming, mix the coconut milk, salt, and sugar in a saucepan. Warm it over low heat until the sugar and salt dissolve. Set aside.

Once the glutinous rice is done, transfer it to a large mixing bowl. Pour the warm coconut milk mixture over the sticky rice and gently fold it in until the sticky rice is evenly coated. Cover the bowl and set the sticky rice aside.

Step 2: Making Chicken Sauteed

In a bowl, combine the diced chicken with minced garlic, chopped shallot, fish sauce, soy sauce, sugar, and black pepper. Allow the chicken to marinate for at least 15 minutes.

Heat the vegetable oil in a skillet or frying pan over medium-high heat. Add the marinated chicken then cook until it’s fully cooked and slightly caramelized, about 10-15 minutes, stirring occasionally.

Step 3: Assembling the Dish

To serve, scoop a portion of the sticky rice onto a plate or banana leaf if available. Top the sticky rice with a generous portion of the chicken stir fried.

Garnish with chopped green onions and fried shallots for extra flavor and texture. You can drizzle additional fish sauce or soy sauce over the chicken for added seasoning if desired.
