Vietnamese Beef Stew – Bo Kho Recipe

1. Bo Kho Recipe


  • 1kg Beef encrusted meat (the meat contains beef tendon)
  • 500g of carrots
  • 1 loaf of Vietnamese bread
  • 2 teaspoons cashew oil
  • 4 tablespoons of tapioca powder
  • Ginger, dried onion, garlic, fresh chili, and star anise
  • Spices: Salt, cooking oil, sugar, pepper, monosodium glutamate
  • Some Vietnamese herbs such as Basil, Coriander, Lemongrass


Step 1: Prepare ingredients

– Deodorize and clean beef: Take a sample of crushed ginger mixed with a little alcohol, add a little salt, use your hands to rub all over the beef, finally wash it. Next, put the meat in and blanch in hot water for a few minutes, then take it out to drain, cut it into bite-sized pieces.

Vietnamese herbs are peeled and cleaned. Lemongrass cut into pieces, cut carrots, or cut flowers to make them beautiful. Dried onions, ginger, crushed garlic minced

– Roasted anise flowers are fragrant to the whole flower, should not be crushed when eating beef, they will be bitter

Step 2: Marinate the beef

After cutting the beef into pieces, marinate with 2 teaspoons of salt, 2 teaspoons of sugar, 2 teaspoons of braised beef seasoning powder, pepper, add a little cashew oil, then add ½ garlic, ginger, and minced onion and mix well. Then marinate for about 25 minutes for the meat to infuse the spices. (Add chili, if you like spicy).

Step 3: Cook Beef Stew

– Put the pot on the stove, heat the cooking oil, then add the lemongrass, ½ garlic, ginger, and the remaining minced onions to the pan.

– Then pour the marinated beef into the stir-fry, stir until the meat is hunted, then add a little cashew oil to make the dish attractive.

– Then pour the filtered water into the pot to cover the meat, then put the anise flowers in and boil on low heat for about 20 minutes, then take out the anise flowers.

– Next, take 4 tablespoons of tapioca starch and mix it in a bowl of filtered water. Then stir well and slowly boil it in a pot until it becomes a paste.

– Season to taste finally adds the carrots and cook for 10 minutes until the carrots are soft. Thus, the way to cook Vietnamese beef stew is done

Tips When Making Vietnamese Beef Stew

The secret to cooking delicious beef stew is to choose the beef encrusted part. Because it has many tendons, the meat will not be crushed and quickly bored compared to whole lean meat after cooking.

You should not use cashew oil to deodorize spices because when exposed to high heat, cashew oil will burn and cause metamorphosis.

You can use a pressure cooker to store the beef quickly.
